Mark, the chocolate thing has to do with pressure and temperature of the chocolate. The bar needs to be heated more to melt then made colder faster harden the sugar to hold the form of a bar, where as the kiss is designed to melt immediately. The kiss might also have a higher fat content to makeit softer and will also alternthe taste.
