A pot roast is NOT a brisket cut, but can be cooked in the same manner, slow and long. Right on about the carrots, onions and potatoes. Leave out the celery. Too chewy.
We don’t have cable or satellite so when we visit my mom over thanksgiving we always watch those dives, binders and so forth shows and he ones with brisket sandwiches always make me almost cry.

Yes I am a Texan and my early ancestors walked out of Tennessee to get here. It took them about 75 years to get here, obviously they left their BBQ rib recipe behind. . It was a really long walk and I have a warm spot in my heart for Tenn.

Nimitz Museum = Fredericksburg
I strongly recommend the museum but caution you to carefully select among the various German restaurants in town. I selected...poorly...perhaps the toughest veal I have ever encountered. PM me if you’re interested in the name of the place to avoid.

Zero celery. I never saw that in my mothers pot roast. If she was here (alive) I would ask her what cut of meat she put in. This was the age of neighborhood butchers when the mothers had their favorite ones and most were stay at home moms though mine did accounting work off and on
Her pot roast was braised in the oven. So it cooked at higher oven temps than you can get just simmering on the stove top
She had no chance, not even with the DNC behind her.
