Looks like the head has a long skinny snout. Maybe some sort of deer or deer like creature. Or anteater?

No. Those are dried monkeys. Look at the spinal structure on the middle one.

Looks to me like two ducks and a bat.

No guarantees as to how any of them died.

"Bush meat" means any meat that they find in the bush, living or dead, regardless of species or condition. They're (essentially) eating well-aged road kill.
