Interesting - sweet potatoes, carrots and orange slices. I am offended with St Patty’s day only a month away - too much orange!
But I am going to try this recipe anyway, Thanks.

I sometimes add red onion wedges with the potatoes and put some orange wedges in cavity of the chicken.
I think I also added a bit more water when I added additional veges.
I then sprinkle with cut up cilantro or parsley.

Wow - this year is going by fast! I’ll have to get some corned beef - - love to make it with cabbage, red potatoes and carrots, but haven’t done so in a while. I normally get the corned beef at Costco (they have a good brand - don’t recall what it is right now, may be Fletcher’s) and it’s too much for just me, so will have to plan a dinner.
Between the recipes for Pat and thinking about corned beef, I’m getting hungry.
