I don’t understand why the defense can’t call witnesses the prosecution didn’t call. For example, why can’t the defense call the medical examiner?

They can, they just have to wait their turn. They probably can’t ask TrayMom what TrayDad said about Trashcan’s voice (hearsay), but they can call him themselves later.
