I would raise some critters for meat and shoot others. For veggies, I would use cattle water troughs a couple of feet high so we wouldn't have to bend over to plant, weed and harvest. Also, the metal troughs prevent rabbits, moles/ gophers/ and voles from getting a free root salad bar. We use the troughs now, and they are great. A couple provide all the salad goodies, tomatoes and a few other edibles we need. Enclose that area and the area around the house/barn with 8' deer fence.
Get a couple of hawks or falcons and owls to nest in the garden area to keep out the birds you don't want.

You cracked the code on my farm with the moat system.
The one on the west side, the Pacific ocean with the river on the North end and a river on the South end would be excellent moats.
On the east side/road side, put in a 8’ Deer fence with 3’ high strands of military barb wire on top of the fence.
