Why shouldn’t they be able to offer health insurance, services, or hospitals?

Because they are Catholic? You are saying that can’t have those things...because they are Catholic and violate a piece of legislation?

So they don’t have that freedom any more to live their lives according to the guidelines set forth by their religion?

It's a non sequitor.

They can provide, or not provide health insurance.

If they do provide health insurance they must do so in accordance with the law.

It sucks, but it's not a Constitutional issue.
