A second parallel issue with the predominance of sugar in the modern diet is the loss of nutrition in chemically raised foods. One pound of Organic tomatoes contains the same nutrients as 20 pounds of Supermarket tomatoes. People are cramming so many calories in their face in a vain search for nutrition.
Empty calories topped with sugar is the modern diet, and obesity is the result.

I agree with your whole post. But in particular to that sentence; it is interesting that some researchers discovered some animals (locusts for one) will keep eating until they have eaten enough protein for their body’s needs.
When half of them were given locust-chow with one third the protein (but same # of calories) they ate three times as much of that food before they stopped eating, compared to regular locust-chow.
I believe that translates to humans too. Food guidelines say to eat no more than 15% of calories from protein because it will supposedly damage your kidneys, but many medical specialists have debunked that. Those people who eat lots more than 15% find that somewhere between 30% and 40%, hunger goes completely away, and stays away much longer, even after a smaller sized meal.
So you’re right that when the body realizes it is not getting enough of many nutrients it signals to keep eating.
