I think BBQ should have a thin spicy sauce if you must have it.
It should be bright and spicy. Never sweet sticky and cloying.
I made a new version of my Yucatan poke chops this week that were outstanding.
Lightly salt the chops then Rub the chops with Bufalo brand Clasica sauce, zest Lime skin over it.
Cook, it rest it, pour the juices back over it and dice a Serrano over it.
