If it was an aircraft, why haven’t we seen a similar contrail every day around the same time?
They have.. there was, the very next day.
Atmospheric conditions have to be correct to make the contrails.. To make it look like a missile, you have to have the sun at just the right angle.

Probable push-back answer would be specific weather conditions but as you suggest very logically why has that particular set of weather conditions never appeared before?
