Do you think they had to use the whole thing? It was pretty big.

How long do you reckon it took for any trees to grow? Granted Noah could have used some oil or tar for fuel, but he had to build shelter and wherever he ended up was basically mud for a good long time.

Olive trees will regenrate very quickly from any root stock

How often are plants submerged under floods from creeks and rivers and survive?

I’d be satisfied that many plants would simply survive the flood and continue to live on.
