I have many months worth of food (dehydrated, canned, dry goods etc.) along with a water purification system that I built from scratch. What's that days without water as opposed to days without food ratio again?

Just a couple of days without water will be the end of you.
You can go a couple of weeks without food, if you don’t have some other health condition.
