Learned that one the hard way while making Easter eggs.
Perfect Hardboiled Eggs.,p>
1) Sufficient water in pan with eggs...half-inch above eggs.
2) As soon as water comes to boil, remove pan from burner, cover pan and set timer for EXACTLY 17 minutes.
3) DO NOT DISCARD WATER....but remove eggs and place them in a pan with ICE-COLD WATER [with ice cubes] for 3 minutes.
4) While waiting thru those 3 minutes, bring original water back to boil.
5) After 3 minutes are up...place eggs back in boiling water for 10 to 15 seconds.
NOTE: This insures that the laws of expansion and contraction will provide you with eggs that NEVER stick to the whites and peel effortlessly.
