When you are finished boiling the eggs, dump the hot water, shake the pan hard to crack the eggs, then add cold water and let them sit for a few minutes. There is usually a small air pocket at the large end of the egg, so start there and they should peel easily. However... if they are too fresh they are usually a bear to peel regardless.
Unbelievable how much the price of eggs has risen.
I don't remember the stamp books. I do have a bunch of the books with stamps intact that my parents had saved.
At the rate that food costs are rising, we just might have to get some laying hens.
We used to keep laying hens, and I would always make pickled eggs with some of the extras.
Hardboil, peel, put in large canning jar, pour boiling pickle mix over eggs to fill the jar, seal, process for 20 mins, ready to begin eating after 3 days.
DH was from Chicago, and loved them with beer. Gave him very bad gas, tho...

What really is affected by diet is the color of the yolk.
From chickens with a grain only diet, the yolks are yellow.
Add some grass or other greens to the diet and the yolks become orange-yellow.
Add some insects and worms to the greens and the yolks will be a bright orange, regardless of the shell color.
It’s nice to see someone else that appreciates Faverolles. I also like Langshans and the tastiest of all French La Fleche.
I raised chicken for fun many years ago. The predators put me out of business pretty quickly.
I hatched some quail eggs because my husband wished for quail on our ranch., it is not in quail country. I started with 50 eggs, 25 hatched out, 12 lived to be old enough to be turned loose. My husband took them out to the ranch, when his father saw them he decided he would love to have a covey around the house just to watch. They were turned loose in the yard and the dogs killed them all in 2 hours. I was in no mood to try that again!

That’s how we boil eggs here at high altitude (4000 ft.) however after leaving the eggs to sit covered, I tip out the hot water and give the pan a good shake to crack the shells then add cold tap water. Peel the eggs immediately and refrigerate.

Did you know jumbo eggs come from the oldest hens? Medium eggs come from the youngest and I assume most drug free chickens, and are cheaper too.

Only to a certain extent. Some chickens will only lay a certain color no matter what their diet is, while others can lay a range of colors.
Ameraucanas even lay pink, blue, purple, and green eggs.
Cayuga ducks sometimes lay gray or black shelled eggs.

Try adding a bit of vinegar to the cooking water.
I do the same as #26, but go a step further to be on the safe side----I gently crack them all over on the sink and roll them between my hands to loosen them further. Usually works most of the time.
