Sandwiches are just fun. My fave is sauted eggplant, mushrooms, and onions, on a chewy baguette with mayo and swiss cheese.

My fave is sauted eggplant, mushrooms, and onions, on a chewy baguette with mayo and swiss cheese. Nana's father always ate his eggplant parmagiana on a hard roll, softened up with sauce (gravy, he called it). Another reason a good Italian dinner lasts you several days!!
