To: Kathy in Alaska
Tonnarlli con Sugo di Campo Sante
The sauce:
- 1/3 cup extra virgin olive oil
- 1/4 pound sea scallops, cut into 1/2 inch pieces
- 1 (or more) garlic cloves, minced
- 1 tblspn minced sun dried tomatoes
- Hot red pepper flakes
- Salt
- 1/2 cup dry white wine
1 cup crushed tomatoes
2 tbspns chopped parsley - 1 tblspn butter.
Method:
Heat the olive oil and cook the scallops for a minute
- Add Garlic and Sun dried tomatoes and red pepper flakes, season with salt and stir.
- Add wine and cook to reduce liquid by half
- Add crushed tomatoes and continue cooking till the sauce begins to thicken.
- Add butter and stir
Toss the sauce with Tonnarelli or Spaghetti or Linguine and serve.
This is fast, easy and delicious, accompanied with fresh bread.
Try it ....you'll like it.

A lot closer to rack time.....My time clock wakes me early whether or not I stay up late. Since the nights have remained cool here, sleeping is pleasant and sleeping late....by a half hour or so...is a bonus.
You can manage that sauce, Night Owl. It'll take about thirty minutes.
