To: snugs

I have a stupid question .. but what are roast parsnips??

They look really yummy, and they make me hungry when you post your dinner pictures .. but I have no idea what they are so I can try and make them at home

Can ya help me?

This is more or less the recipe I use but I tend to use the fat from the meat either from the joint I am cooking or if I have roasted duck or goose recently I keep the excess fat for the potatoes or parsnips.



Ingredients
750g/1½ lb parsnips
3 tbsp sunflower oil

Method
1. Peel the parsnips and if necessary, cut out the woody central core. Cut into 5cm/2inch lengths.
2. Keep in a plastic bag in the fridge until ready to cook.
3. Steam or boil the parsnips until not quite tender.
4. Heat the oven to 200C/400F/Gas 6. Heat the sunflower oil in a roasting tin and toss the parsnips in the hot oil.
5. Roast the parsnips for 30-40 minutes until crisp and golden, basting half way through the cooking time.




I cook the roast potatoes in the same way and in the same tin.
