Giess what? I am baking two more cakes today! Yesterday's cake is almost gone. Someone must have gotten into last night while I slept. :)

O - You are BAAAAD!!!! Vewy, vewy BAAAAD!

I am anxious to hear if snugs/co-workers liked it. I think their expectations are different from ours, for cakes, so they may not enjoy it. (just like I would probably not enjoy their fruitcakes).

I hope she tells us the TRUTH!!!!

snuggables, be VERY honest with us - do not spare our feelings. It's not personal - but cultural.

LOL-LOL-LOL --- yes, I am very baaaaaaaad. I went to the grocery store early this morning! I bought 4 tubs of cream cheese frosting and some wonderful Christmas decorations for cakes. Out of today's two, one will be the birthday cake for Jesus. I promise. :)

We have those pump plastic bottle things in our hospitals at the entrance and exit to each ward.

There are quite a few commercial sprays and gels in our markets as I'm sure you have also. I must confess even though I guess the results don't last that long, I find I use them from time to time also.

Well a couple of people had 2 slices so they must have enjoyed it.

I will be 100 per cent honest to me it did not have a lot of flavour maybe my cocoa is not as strong as yours also I did overdo the red colouring which may have killed some of the cake flavour.

I also think I did not cook the icing long enough and that would probably have tasted better if cooked longer.

Having said all of the above and would be interested in your comments/advise on those points. I enjoyed it and will make it again but maybe put some actual coconut in the mixture to give more flavour - what do you think? Also for the amount of mixture 2 eggs seemed not enough maybe your eggs are larger I think next time I will use 3 eggs.

Here it is at work half cut up

Wow, thanks snugs!

It doesn't have a tremendous amount of specific flavor. The cocoa is just a sprinkling of flavor. It's a subtle cake, yes.

I was concerned that changing to a coloring paste might impact the overall texture/flavor. You might give it a go next time with the liquid.

The icing is just cooked until it's thick. Hard to mess that up, unless it was not thick enough or scalded.

My eggs are always "jumbo." 3 small might be fine, and I think coconut might help with flavor. I just like mine subtle, I guess.

It's a nice moist cake, so hope yours was.

Play with it snugs, and make it your own.

Thank you for the report!

Looking forward to our Merry Christmas pics, and I'm going to try to take a few local photos of my town, to post.

Love - Karen

The paste was fairly liquid but I did use too much I will know that for next time.

Also I think that I overdid the cooking time I am not used to a cake of that size only taking 30 mins to cook most of the cakes I make take an hour or more.

I will know in future 30 - 35 mins means that or probably even less in my fan oven
