that's what I thought, but now that I think back to the few times I've had pork bar-b-que, I do remember some of it was "pork" color.

I suppose it depends on what sauce or rub you put on it what colour it is.

BBQ to me though also have marks from cooking on the food. Like you get from the health grill type appliances
