If a certain restaurant is closed today, I'm going to have to learn to make my own enchiladas........

I'm going out to find out this afternoon, and will be very disappointed if I find out they're not open......

Our favorite Mexican restaurant closed a couple of years ago and their enchiladas were the best. We've recreated them at home:

Brown ground chuck, drain, add a large can of Old El Paso enchiladas sauce, and heat thoroughly. Roll meat mixture in tortillas, cover generously with grated cheeses, and heat on plate in oven. Serve with additional sauce on the side. My kids love this and it is so easy.

No kidding, Betty Crocker cookbook (just regular one, nothing fancy) has an EXCELLENT and easy recipe for enchiladas. Since I made my first batch 4 years ago, hubby has refused to eat at any Mexican restaurant.
