The peppermint candy of cane is white which represents the purity of God the Father, God the Son and God the Holy Spirt.

The red represents the blood Jesus shed for us. The reason the red surrounds the cane is that the blood of Jesus covers the entire world.

The cane was bent to represent the letter "J" for Jesus and also represents a Shepherd's staff to rescue sheep from dangerous areas or free them from thickets.

I must admit if I had heard it before I had forgotten it, I suspect I had heard it but maybe not explained as well as you and that lady did.
