I like to do the rub overnight, had very little moisture loss. I rinsed out the plastic ziplock and used the juice for basting. I have a Weber remote thermometer that lets me sit at the 'puter and monitor my meat temp, plus a Taylor digital slips into one of the grill lid holes to monitor the chamber temp...this is my second smoke attempt and I'm enjoying the pit flavor very much. Using a mix of mesquite and hickory this time. The coals/smoke have kept the chamber right at 250 all afternoon without any gas fire going...
Slaw is ready and the corn is soaking...
I'm really getting hungry but we have ONE hour to go still...

Tonight, it's Stewart, Harvick, Rusty Wallace, and Nemechek. I did get bonus points for Smoke sitting on the pole, but last time my team all started in the top 10, they all finished in the 30s or worse

My alternates are SlowCasey & Jr. Actually for awhile Truex was standing by for Jr because he wasn't feeling well and didn't know if he could make it all the way. But recent updates say he's a go.
