"Do you have a casa data recipe?"
LOL! CASSATA or, translated, encased.
Level of difficulty: very high.
Preparation time: 2-3 days.
I'd like to see some favorite turkey leftover recipes. At our house the day after thanksgiving it's turkey, vegetable and rice soup and a very large turkey pot pie.
I love cooking. I love the prep, the action, the waiting, the adjusting, the presentation. I love it all. But that recipe is so incredibly fire-and-forget that I have to try it.
Thank you! Bumping for a later read.
Scalloped Pineapple does sound strange, but it also sounds good. Copied and I will try it! Thanks.
Filling:
- 1/2 cup milk
- 1/2 cup water
- 1 egg beaten
- 1/4 cup sugar
- 1/4 cup butter
- 3 1/2 cups white (all-purpose) flour
- 1 teaspoon ground cinnamon
- 1 1/2 teaspoons salt
- 2 1/4 teaspoons bread machine yeast
Add ingredients to bread machine in order given, and select dough cycle. When cycle is completed remove dough to floured surface. Cover and let rest 10 minutes.
- 1 1/2 cups chopped apple
- 1 teaspoon ground cinnamon
- 1 to 2 tablespoons brown sugar, packed (optional)
Knead filling into dough. If the dough becomes to sticky from the apples add a bit of flour.
Shape into loaf and place seam side down in greased 9 x 5-inch loaf pan, cover with a towel and place in a warm place until dough rises 1-inch above pan.
Bake on lower rack for 25 to 30 minutes at 375*F (190*C). Remove from pan immediately and allow to cool on a wire rack.
Yields 1 loaf.

Oh, I thought it was casa data=date house..Kind of a fig newton filling, except with dates, and a shortbread outside..
My friend's Sicilian grandma made them until she got too senile to make them.. Everyone else who's tried to make them..they just don't taste as good.
Your dump cake is good. I have tried this before cooking in a iron dutch oven on a campfire. It is easy to make and really very good.
Please see my post #63
And P.S. - Let the era of the fried turkey be over. I don't care who makes it or how it's done, fried turky SUCKS. Especially when it's injected with anything.

One of the things I loved about growing up in Philly .. family was always around.
I sure do missed that
Thanks for this thread Carlo
My husband is a great cook, and makes tons of elaborate dishes; BUT, if anyone is looking for an extra side dish, that always (for whatever reason) gets rave reviews:
1 large carton small curd cottage cheese
1/2 each of red and yellow pepper diced
1/4 c. diced celery
1 tsp dill
Takes about 10 minutes! Very Atkins friendly!
The cornbread dressing sounds like my family recipe also. I love it, and it isn't Thanksgiving without it. Never have added eggs to it however, but I may just try that.
Bump!
I stuff my Turkey with the Following:
Red onions, pearl onions, lemons, green apples, oranges, and handfuls of fresh herbs. I like to use sage, mint, rosemary, tarragon,( anything will do).
I don't think my stuffing recipe would be welcome here.. I make two kinds, one with drunken apricots, raisins, fresh herbs abd fresh ground spices- and one with potatoes and they are all carbs and then more carbs!
I make a relish from dried cherries, whole cherries, dried cranberries, orange juice, green chilies and whole cranberries. This needs to set for two days.
And a portabella Mushroom salad with fresh whole fennel and blue cheese.
And then the pies... But I won't talk about that here!
I have to do the traditional menu or everyone complains!
When I first heard of the upside down turkey some years ago, I wondered why a couple of new, big sponges couldn't be used to grip and turn the turkey. Then again, I never got around to trying it out.....
