Snip - Indianapolis Star Explosion @ Arbys Witnesses said they heard an explosion and smelled natural gas - crew from Citizens Gas & Coke Utility has been on the scene for "some time" today and no evidence of gas leaks. ..."Whatever caused the explosion happened inside the building," Restaurant employees did report to Citizens Gas and fire officials that a cleaning crew had been in the building Wednesday night and had disconnected and reconnected the deep fryer and adjacent stove. http://www.indystar.com/articles/3/181003-9083-092.html

Why would a cleaning crew be allowed to touch the "deep fryer" or the "adjacent stove?"

It seems to me the cooking apparatus should be hands off from the cleaning crew.

That cleaning should be done by the staff doing the cooking, before, during and after cooking meals.
