Mind telling me what you intend on doing with those parsnips? I only ever buy them for chicken soup, and I wonder what else can be done with them.

Mind telling me what you intend on doing with those parsnips?Cut out the tough core, and shred them across the grain. Use them raw in a salad, or mix them with shredded carrots and broccoli stalks for a cole slaw.
