Why do you think they don't exist? A particular combination of genes produces an organism which is more or less fit than some other combination. When we are talking about the degree of fitness we are talking about the value of fitness function.
As a mathematical entity they don't exist until they are produced. Odd numbers exist, even numbers exist, fitness values don't.
