according to researchers, when weddings and celebrations were put on by folks in the old testament, apparently what they would do was serve the better wine first, so folks would enjoy the taste more- then as the guests became a bit more inebriated, they would trot out the cheaper wine to save money- When Jesus turned the water into wine, it was later when cheaper wine woudl have sufficed, but He made the wine the best-
So it says in the text! “It is ever the good wine that men set out first, and the worse kind only when all have drunk deep; thou hast kept the good wine till now.”
