I'm not sure. I think it might represent the omnipresence of God. Just a guess, though...

In some of the artwork, the fish look like giant alligator gar. Yucky.
Everyone seems to assume it was an existing marine creature, either whale or fish. But there is another possibility consistent with the text: that God created a unique sea-creature just for the occasion, which was perfectly suited to house and transport Jonah.
