'Pears to me that your 'guesstimate' of 800 miles for the span of Texas is pretty close to the mark!
Google Earth's "Ruler-Line" tool gives the straight-line span of Texas from Toledo Bend on the Sabine River to El Paso to be 775 Miles. Taking into account surface curvature, your "some 800 miles across" is pretty dang close!

Given that the earths oceanic crust is only 6 miles thick, and given that the deepest place in the ocean is a narrow trench 60 miles deep, it seems reasonable a depth of 800 miles for a ball of water could hold the earths oceans. The average depth of the ocean is about 2 miles.
He took 7 pair of clean animals and 1 pair of unclean animals, and 7 pairs of every kind of bird.
Nothing said about Insects. I guess they survived clinging to all the floating debris.
