I completely agree that this Heather/Heath person needs to seek employment elsewhere, and that Azusa Pacitic University has a right to define their own mission and their own hiring and firing practices, and I completely agree that what she did to herself is an act of aggression against her own body.
But just for discussion, consider that one can look up "sex reassignment surgery" in their Biblical concordance and not find a thing. How does one argue Biblically against a series of surgical operations intended to be a therapeutic approach to a disorder now known as "Gender Dysphoria" for which the "cure" is supposedly transsexual conversion?
