This is another example of Jesus using a parable or figurative language to express a deeper meaning. Eating or consuming His flesh represents a total trust and belief in Him.

In the Synoptics at the Last supper discourse Jesus uses the word "Estin" when He says that this "is" His body. Can you show me a single instance of the word being used to mean figurative, or "represents?

Jesus also said in John 10:9, "I am the door....", which in the Greek is ἐγὼ εἰμι ἡ θύρα. By your same logic, the word εἰμι "am" can only have a literal translation, so you are in a sense arguing that He must have literally meant he is a physical door. Obviously, he meant "door" in a figurative sense. In the same way, "This is my body" is meant figuratively, since that piece of bread He was holding wasn't actually His body.
