I havent tried this yet, but I am thinking a leg of lamb marinated in olive oil, dijon mustard, garlic, rosemary and cracked pepper, and a bit of salt, spit roasted over pecan would be most glorious.

That's what we had (without the mustard), oven roasted with new potatoes, served with mixed vegetables and rotini.
It would have been better if the potatoes had been aged a bit.
