One of the blessings of our US Catholic communities is the contributions of each of the many cultures represented in our parishes. As we prepare ourselves for our Lenten Observation it would be fantastic if we share the unique and special Lenten traditions and recipes of our communities and childhoods. Surely we can collectively do better than salmon loaf every Friday.

We eat at Long John Silver’s once a year during Lent. We make ourselves sufficiently sick and vow to never eat there again. We can’t help ourselves. :o)
Growing up it was always fish sticks and mac and cheese, cold cheese sandwiches, egg salad sandwiches and tuna casserole. Throw in some meatless spaghetti, rotate a few times and Fridays were covered.
Lent isn’t such a big deal anymore. We don’t eat meat on Fridays all year long. We eat a lot of soup of Fridays. Here’s one of our favorites. I don’t have a recipe so you’ll have to figure out the ingredients by taste preference.
Start by sauteing garlic and onion in olive oil in a large pot. Add two of the larger cans of Italian diced tomatoes(28 oz. each I think), two cans cannellini beans, and vegetable broth(better with chicken broth but not on Fridays) to soup consistency. Throw in your favorite Italian seasonings and about 5 minutes before serving, add half a bag of spinach torn into smaller pieces. Serve with bread of choice.

I don’t know Samiam in real life, I’m just her voice of reason on the computer, we would probably be reading shocking stories about her on TV if it weren’t for me. :-)

It’s been a rough couple of weeks! I’m so thankful it’s Friday. Even though we don’t do anything special on Friday’s, it still makes my heart race knowing we have a couple days off. I see movie rentals in my future!
Cheer up! Isn’t it warm where you are today? Get some sunshine this weekend.
