They have little itty bitty tiny heads surrounded by healthy big leaves.
I think perhaps it was too warm when I planted them and they are just beginning to mature with this cold weather.
I read that nitrogen is vital for heading but since this is the first time I’ve grown them, I don’t know.
The baby bok choy looks great though.
You could cut the leaves off, shred them, and make Salvadoran Slaw. One of the ladies at my church makes some that is so good you can put it on anything. Ran out of cheese? Ham sandwich with Salvadoran slaw. Leftover rice from the takeout Chinese? White rice with Salvadoran slaw. Mmmmmm.
