What man seems to have discovered in the theories surrounding the creation of the solar system seems to correlate with how God, as described in Genesis, created the world on which we now dwell. If not bound by time, why were 6 days needed, where an instant would suffice?

Who said that 6 days were needed?
God created (worked) for 6 days, and took the 7th off. Later, His instructions were to honor the Sabbath, as He had rested on the 7th, Himself.
The creation (work) was performed as an example for how we should conduct our lives--work for 6, rest on the seventh.
