Henry Kamen’s “The Spanish Inquisition.” sets the record straight. A scholarly work, not apologetics. He actually combed 250 years of files of the Inquisition. Norman Cantor, the medieval historian, is a Jew and very fair in his assessment of events.

I figure your joking; but just in case...

Harold Lamb “Of Iron Men and Saints” and “The Flame of Islam”, usually combined into one book “The Crusades”.

Also one of the best ever is “The Knights Templar” by Stephen Howarth. Best one chapter summary of the first crusade ever.
