Cutting and pasting and adding onto Scripture, making it into something entirely other than what it originally stated, however, is NOT the story of "every church." At the moment, I can only think of two religions which have done that: Mormonism and Jehovah's Witness.

I think it is clear that Joseph Smith was, at best, deluded and more likely, not honest.
But many churches have been led astray by deluded and/or dishonest leaders only to have the good people of the church continue to work to serve God and man. The various Mormons I’ve known have all been good people who loved their neighbor, worshiped God and asked forgiveness in the name of Jesus when they did wrong.
Consider all the Christians of past times who could not read the scriptures at all and perhaps had a dishonest priest - I am sure that those who were sincere in their faith and forgiveness for their wrongs were forgiven by God.
