...would be more in line with what the Trappists Monks do to make their excellent (but pricey) beer. I don't know what secret/special process the Monks use, but so long as the process isn't similar to that required to make Kopi Luak coffee, I'd be willing to take a sip.

No, it isn't cat scat coffee. But the yeast comes from the natural yeast in the area, and the fermenters are mainly open air.
The process is close the same as it was in the Middle Ages.
