"And after denying Christ, we dont hear about him much."

I agree with your assessment about being skeptical.
Peter was a great Apostle, but his mission field was among the Israelites and if I understand the history correctly there was not a large Jewish or Israelite community in Rome. Jesus did bring Peter back into the fold with the miraculous catch and the meal after wards where he told him to "feed my lambs".

if I understand the history correctly there was not a large Jewish or Israelite community in RomeThe Jewish community in Rome in the 1st century was the largest Jewish community in the world outside of Jerusalem.
Some estimates claim as many as 50,000.
They were officially expelled from the city late in the century because of sectarian violence in the community, but by the beginning of the second century the Jewish population was very noticeable once again.

Peter was a great Apostle, but his mission field was among the IsraelitesHe was commanded by God himself directly in the Scriptures to receive the very first Gentile convert intom the Church.
His mission field was allotted to him by Christ directly at the end of the Gospel of Matthew when he was commanded by Jesus to go forth and preach to all nations.
