At daily Mass, we have adult altar servers of either sex, if they are trained there is no problem.

In all seriousness, I understand the laity can and should incense a priest when no deacon is available, if incense is being used. Most of the time on those special occasions, there are other priests waiting in the sacristy to help with Communion.

You can't tell me with a straight face that he didn't pick a woman because she was a woman, and he wanted people to see a woman performing a clerical role. I didn't look at the rule, but it seems that you pick people for this role as follows, first a ordained Catholic minister, then laity. It males sense you would choose a male for this first over a woman, because the lay person is simulating a clerical duty.

This was to promote priestesses. It makes a lot more sense in that light.
