Why can't they? Jesus did say the he would not leave us nor forsake us until the end of time. Time has not ended until the day of judgement. Those who are left after the rapture, whether pre, mid , or post, will have another opportunity tio get saved. Some will spend eternity in heaven while others will be in hell.

This is one passage that is used to defend the false doctrine that people who reject the Gospel NOW will never be able to receive it after the rapture::

(2 Th 2:8 KJV) And then shall that Wicked be revealed, whom the Lord shall consume with the spirit of his mouth, and shall destroy with the brightness of his coming:

(2 Th 2:9 KJV) Even him, whose coming is after the working of Satan with all power and signs and lying wonders,

(2 Th 2:10 KJV) And with all deceivableness of unrighteousness in them that perish; because they received not the love of the truth, that they might be saved.

(2 Th 2:11 KJV) And for this cause God shall send them strong delusion, that they should believe a lie:

(2 Th 2:12 KJV) That they all might be damned who believed not the truth, but had pleasure in unrighteousness.

They do not consider what is said in Revelation about only those who receive the mark are immediately condemned with no second chance.

Even the thief on the cross had a last chance before death, but those who receive the mark have NO CHANCE at all.
