We know one apostle was married at one time because he had a mother in law - no mention of his wife, though. No mention of wives of the other apostles. But we do know that they followed him and left everything.

Not so! "Don't we have the right to take a believing wife along with us, as do the other apostles and the Lord's brothers and Cephas? [1 Corinthians 9.5]"

Well of course they had a right, but they apparently renounced that right when they became Jesus' apostles.

"Then answered Peter and said unto him, Behold, we have forsaken all, and followed thee; what shall we have therefore? And Jesus said unto them, . . . every one that hath forsaken houses, or brethren, or sisters, or father, or mother, or wife, or children, or lands, for my name's sake, shall receive an hundredfold, and shall inherit everlasting life."

Incorrect. You are relying on a corrupted translation of Scripture. 1 Corinthians 9:5 actually reads: "numquid non habemus potestatem sororem mulierem circumducendi sicut et ceteri apostoli et fratres Domini et Cephas "

Which translated into English reads: "Have we not power to carry about a woman, a sister as well as the rest of the apostles and the brethren of the Lord and Cephas?"

The word mulierem is woman, the word uxor would be wife. St. Paul, who was celibate, wrote woman, not wife.

Someone has probably responded to you by now,but in case they have not,the word you interpret as wife,in the phrase "believing wife",is the same word that is used by Jesus Christ when He talks to His Mother at the wedding at Cana. At the wedding it is interpreted to mean woman. It could be sister,aunt,neighbor,mother-in-law,etc.
