Assuming you wished for me to respond to your 4 year old Atkins hit piece. Not unlike a man being asked if he still beats his wife.. I'm not about to argue with a unnamed staff writer's 4 year old opinion piece.

I am so sorry that Atkins wasn't your panacea, that is really why I started these threads.. to bring a spring to your menu with recipes that spark interest in eating within your restrictions and enjoying it.. Ping me or read some of these recipes and see if they work.. GOOD MY FRiend, we are here for ya!

I'm an advanced diabetic in renal failure. I've been told to cut back on meat because I'm not digesting it. How can this diet work for someone like me?

LOW-IRON, CARBOHYDRATE-RESTRICTED DIET FOUND MORE EFFECTIVE THAN PROTEIN-RESTRICTION FOR END-STAGE KIDNEY DISEASE PATIENTS

Is a controlled carbohydrate nutritional regimen like Atkins a better option for patients with kidney disease than the usual recommendations? According to recent research published in Diabetes, evidence suggests that dietary factors other than protein consumption play an important role in the progression of kidney complications (diabetic nephropathy) during end-stage renal disease. The purpose of this study was to determine whether a carbohydrate-restricted, low-iron, antioxidant-enriched diet or, CR-LIPE, may delay and improve the outcome of diabetic nephropathy to a greater extent than the commonly recommended protein-restricted diet. It was found that CR-LIPE was 40-50 percent more effective than standard protein restriction in improving renal function and overall survival rates.

One-hundred ninety-one Type 2 diabetics were randomized to follow either CR-LIPE or the standard protein-restriction diet. The researchers monitored for the following: the doubling of serum creatinine (component of blood that increases in advanced stages of renal disease), the development of end-stage renal disease and death rates.

After four years, serum creatinine concentration doubled in 19 patients on CR-LIPE (21 percent) and in 31 patients following the protein-restricted diet (39 percent). Renal replacement therapy or death occurred in 18 patients on CR-LIPE (20 percent) and in 31 subjects following the protein-restricted diet (39 percent).

The hardest meal so far is breakfast - I'm so used to a bagel, toast, pancakes, etc.

Your recipe for Cauliflower Cheese Puffs is yummy. I made these this afternoon and there are few left. I must tell you though, this would be excellent as a side dish instead. Don't bake the little puffs, just serve the whole thing like you would mashed potatoes. Wonderful stuff.....

I don't eat meat, only fish. However, I can't wait to surprise people with your fish recipe over the holidays. It's going to blow them AWAY!!! :D

Catfish and Pecans

Catfish and Pecans are Southern favorites. Combine the two and you'll be whistling "Dixie."

Rinse fillets in cold water; pat dry. Brush fillets with 1 tablespoon oil and sprinkle with black pepper. Heat remaining oil in saute pan and add onions, bell pepper and garlic. Simmer for about 5 minutes and remove from heat. Place fillets on a medium-hot grill and cook for about 6 minutes.
To serve, place fillet on plate and cover with pepper/onion mixture. Garnish with chopped pecans and serve. Serves 4

 LowCarb Zesty Breakfast Blueberry Muffins
Preheat the oven to 375 degrees. Line 9 muffin tins with paper liners or spray with nonstick spray.
1) Combine the eggs, oil, and cream; stir to blend.
2) Add the whey powder, baking powder, Splenda, cinnamon, lemon rind, and orange rind. Stir until just combines. Do not over-stir or the muffins will be tough. Fold in the blueberries gently.
3) Spoon 1/2 of the batter into the prepared muffin tins. Place a cube of cream cheese in the center of each. Fill the tins with the remaining batter, making certain that the batter goes completely over and around the cubes of cream cheese.
Bake at 375 degrees for 8 to 10 minutes, or until the muffins spring back when touched and no longer look moist on the top. Serve warm.
Makes 8 muffins @ 117 calories, 11 grams fat, 3 grams protein, and 3 grams carbohydrates.

Keep me on your diet ping list. Help me get off this 2 week plateau I am on!

Two weeks does not a plateau make. You need to have more patience. There is nothing unusual about weight loss "stalling" from time to time during this diet. During a significant weight loss, your body sometimes needs to adjust to its new weight before allowing you to drop off yet more. The fact that you are not gaining any of the weight back should be seen as a positive, not a negative.

While I've lost weight rapidly since April, there have been certain periods over the past six months where my weight loss slowed or stopped. In fact, I'm in one of those cycles right now. I've only dropped 0.4 pounds over the past three weeks. But I'm not worried. I feel great and I'm positive that within the next week or two, I'll step on the scales and see that suddenly another 3 pounds or so come off literally overnight. It's strange like that but it's happened to me several times already.
