My sister makes her regular lasagna recipe and subs sliced squash for the noodles.

Here's another good "pasta" recipe: I cook a big bag of frozen cauliflower to just al dente and serve it topped with a favorite meat sauce a la Italian and sprinkled with Parmesan cheese. Almost as good as spaghetti.

I substitute steamed (and well-drained) cabbage for lasagna noodles. Delicious!
