There is a place in France where the naked ladies dance, and there is a salad in France that makes dancing ladies get naked. Youd think there would be a lady in France that dances naked on a salad, but there isnt.
8 bite size new potatoes
a few anchovies
fresh parsley
handful of Greek olives
6 quail eggs
handful of tiny yellow and red miniature tomatoes
handful of green beans
spoon of balsamic vinegar
spoon of olive oil
a small tuna steak
Boil potatoes in salted water until soft and edible, about 10 minutes.
Hard boil quail eggs by putting in already boiling water. Turn off heat immediately and let sit until the water is cool enough to put in your hand. This is to insure that no stinky green crud forms around the yolk. Remove them from the water and peel.
In a pan, sear your tuna, then cook on medium high for a few minutes until it is cooked all the way through. Cool and slice into strips or small chunks.
Circumcise the green beans and boil for a few minutes to blanch, but not too much or they will turn a dull color. Mix all ingredients to make a salad. Chill if you want, or serve while the potatoes are still warm.
Serves 2 or as many as you want if you use more ingredients.

My husband has an ulcer and acid reflux. He was always taking medicine and complaining. I finally convinced him to try Atkins for one week. Well, he's been on it for about 2 1/2 weeks and feels great. He has lost 22 lbs, and I think he looks younger.
Thank you for all the great recipes. This can be a life-style change for us, if I can keep variety in our diet.
Key Lime Pie

1 small can of Redi Whip whipped topping |
Make Jell-O according to package directions but use 1 less cup of water. Set aside. In a large bowl whip the cream cheese with a mixer until it is smooth. Add the lime juice to the cream cheese. Slowly cream in the lime Jell-O in a thin stream to the cream cheese. Chill in the fridge until set about 3-4 hours. Serve with 1 tablespoon of Redi Whip on top. Garnish with a thin slice of fresh lime.
