Sadly, you are correct. Most of these old farmers have a "very good eye" for prime meat,,, they can identify it while it's still in the feedlot, and the very best stays in rural freezers. Very few urban folks have ever tasted 'true' prime meat. There is no financial incentive to send the good stuff to market, so we keep it for ourselves.
