Actually your questions gets into a whole lot of philosophy. If God knows all (i.e. if we will end up in heaven or not) what is the point of existince. God can just place our souls where they belong and forget about an earthly existence. Because in essence if God knows ALL and time is not linear for God, we have already committed the sins before we ever were born.
I believe God know all possibilities, but since He gave us free will he has limited his own knowlwedge on the final outcome. Similar to the way he limited his control over all be ceding hell to satan. He can take back control (or eliminate free will anytime he wants) it is not a permanent thing. Every choice leads to infinite more choices and God knows where each leads.
For example, God can tell I will arrive in Heaven 76% of the time based on my choices but the final resolution of my soul is still up to me
Free will and choice are an illusion without which there would be no point in existing.

From this and the rest of your statement, I seriously wonder how you chose the handle, "Joyful"
God knows exactly how we will react to any given situation, but we don't, so we have to experience it personally to understand later on why his way is perfect, to avoid God having another problem to deal with such as Satan, who was made perfect, but didn't understand what a blessing it was, and no one can, until they get to see both sides.
