Planning an Octoberfest party? Well we have, and here's a few suggestions for your consideration;

OCTOBERFEST MENU

POTATO, SAUSAGE, AND CABBAGE SOUP

ROTE BEETE - PICKLED RED BEETS
KARTOFFELSALAT, COLD POTATO SALAD
HOT GERMAN STYLE POTATO SALAD
CUKECUMBERS, PICKLED CUCUMBER
HERINGSALAT, (Herring Salad)
 

SCHWEINEKOTELETT in Zweibelsosse (Pork Chops in Onion Sauce)
BRATWURST
SAUERBRATEN MEATBALLS, WITH SAUCE
KIELBASA, SMOKED TURKEY

ROTKOHL is a traditional German specialty of sweet and sour red cabbage, which is heated and served as a side dish with a meat entree.
SAUERKRAUT is made the old fashion way using only 3 ingredients: cabbage, salt and water, splashed with cider vinegar.
CARROTS IN BEER
SPATZEL, BUTTERED NOODLES
SPICED APPLE SAUCE

ROGGENBROT (German rye Bread)

APFELSTRUDEL (apple Strudel)
GERMAN WHITE CHOCOLATE CAKE

MARZENBIER,  A Light , golden-brown and lively flavored beer which comes mostly from Munich.
BERLINER WEISS, A light beer brewed from wheat through natural fermentation
ALTBIER,  This beer also brewed from natural fermentaion comes primarily from Cologne and Westfälen.
MUNCHENER, This Dark beer originates in Munich and is quite strong
BOCKIER,  This beer is also strong and dark but it is also very aromatic. It is brewed throughout Germany now but it finds it's origins in a small town called Einböck

About that French toast....that is really a treat! I have been to restaurants with many different recipes, and we do have a wonderful one in the Cookbook, but just soaking thickly sliced old French bread; (not the moldy kind) in beaten eggs and milk with a touch of baking powder will puff those babies up as you fry them in butter. Sprinkle with powdered sugar. C/O my papa

P.S. Piasa, for this, I think we should leave out the Crisco with the pan scrapings.

When I was a kid, everyone saved the bacon fat left over from frying bacon. I did for years, also, and I'm sure many still do. It was great for cooking and frying things - like potatoes. I loved the smell and taste -- in its HOT LIQUID FORM. Anyway----- my Grandmothers would spread some of the cold stuff on a piece of bread and give it to the grandchildren when they were hungry. Even now, the thought of it makes me sick! I wouldn't touch it then and just thinking of it now makes me say 'Yuck'!

Hey Carlo,
This is Stanz. How are you doing? I miss my FR buddies and it looks like it's going to be a long haul before I'm back online. We are operating out of a temporary location on E. 53rd St (upper Manhattan.) Since everyone's e-mail is hooked up to the internet, they have suspended all alternate internet access. I can't check headlines, shop online, or look up
anything. It's driving me nuts! .......... What a dilemma!.........I haven't been downtown yet to see Ground Zero. You need a police authorization to get within 10 blocks of the area. My boss went down to our building on Friday. She had a police escort. She went to try to pick up any files of work in-progress which was lying on desktops. She said the building is in good shape. Clean-up crews are at work removing rotted food from the cafeteria. They estimate we will be back there in 6 weeks.
This is going to be the longest 6 weeks of my life.
A friend who works a few blocks away on the East side was not affected by the attack. She said the air smells like smoke and everything is coated with a fine dust.
If I weren't an old bird ( note from the Chef, I know an old bird when I see one, no way you are an old bird...LOLOLOL), I would enlist. Blowing that *darn (* strenuous editing   Hahahaha) turban off Bin Laden's head would make my day.
I wish you guys all the best and can't wait to get back online so I can vent. (I'm doing a pretty good job of it right now!)
Please give my regards to Jellybean, Angelique, Nutmeg and Firebrand and tell them to watch their backs. It's pretty scary when Rumsfeld says another attack on U S soil couldn't be ruled out.

Kisses and Huggs, I am mad as hell that everyone's life has been affected so terribly by such slimy scumbags. I wish I was still young enough to be back on the front lines, because it looks like the good old USA could use some of old coots to fire up the youngsters, and show them how to kick some ragtop a$$...LOL  We'll keep the home fires burning, you just take care, and if you don't mind I'd love to post your messages on one of my current Cookbook threads, with or without editing, ........hell, I'll do it anyway, like it or not.. Bwhahhahahhahhah. Warm bacio sulla faccia, to all of you, you are in our prayers!!

Carlo, You go ahead and print anything I send you...complete with expletives. Tell Jellybean to e-mail me here. At least I could "chat" with her or anyone who wishes to e-mail me and try to re-kindle the old FreeRepublic flame. (I especially miss arguing with all the Creationists...a great series on PBS last week called "Evolution" which I enjoyed.) Tanti baci...keep in touch....I' m going out now to buy a sandwich...maybe, if I'm lucky, I'll be able to find one for under $10.00. Whatta crime! Ciao,

Arghhhh.... I'm having a disturbing gastronomic flashback to the German "food" my beloved great-grandmother used to make.

The best plan for Oktoberfest:

1. Prepare the traditional German cuisine and beer.
2. Toss the food in the dumpster, order pizza & enchiladas.

Hi Jelly and Carlo,

Thanks for your message, Jelly. I'm glad Ponz7 was able to e-mail you. It's been really nuts without the internet.
They say it will be about 6 weeks before we're back downtown at, 1 Liberty.
So, I guess I will keep in touch through you and Carlo.

This morning, I went down to our building with a group of co-workers to retrieve files and personal belongings. I Liberty is directly across the street from the site. The side of the building which faces the Trade Towers on Church St. is entirely covered with orange netting to protect the work crews from shards of glass from  shattered windows in my building.

When we came out of the subway, the brightness of the area was blinding- - - there was no more shade from the towers to darken the streets. We had to walk over 2 blocks to, 1 Liberty, with a police escort. The cross streets were closed off and guarded by Army personnel. Down these blocks  you could see the remains of 5 World Trade still standing. It looked like a skeleton- so bleak and gray. It is hot and sunny today, but nothing can lessen the gloominess of the wreckage and all the closed shops along the way. I couldn't smell smoke, but my mouth was coated with a dust of pulverized cement which left a chalky taste. My lunch of tuna salad and lots of orange juice hasn't removed that taste from my mouth.

When we arrived at the building, we had show more identification and be searched. We were led to a freight elevator which took us as far as the 42nd floor. From there each of us had to use the fire stairways to go up or down to our floors. No lights were on in the stairways. I felt my way with that stupid duffle bag. I thought about all those countless souls who descended from those burning towers without lights and for some, without hope of reaching the bottom.

After I did what I had to do, I returned to the 42nd floor to wait for a ride down. Before leaving, I was able to find a window which faced the site. It was difficult to see through the netting, but I did see two are as still smoldering. The central area has been cleared away along ground level. Along the perimeter of the site are the mountains of twisted steel. Cranes are everywhere and the whole place looks like a war zone.

The areas underground have not been excavated with the exception of the entrances to some subways and the entrance to 4WTC which was the shopping concourse. They say some shops are intact and they apprehended some looters trying to make off with watches and jewelry. The Godiva store still has its displays of chocolates all covered with cement dust. I was anxious to return to my building.

Now that I have been there, I wonder how we will function outside of the office in that ghost town without shops or restaurants. That's the worst of my worries, though. I am fortunate I am still around. I think many Americans lost their innocence on Sept. 11th. From now on, I think I will never take certain things for
granted.

My rides back and forth through the Lincoln Tunnel will never be relaxed. I look up a lot now which I never did before. I'm sorry I never looked up at the Towers. I just assumed they would always be there tomorrow.

Sweetheart, your mail is so meaningful and sobering, reading it just pisses me off even more!! Please stop each and everyone that you bump into that has been affected in a tragic way up there, and tell them how much the fly-over zone is mobilized to kick some tail and revenge what has happened. Yes, revenge is good and useful, when directed at the evil in this world, I'll let people much better, and more faithful than I pray for a better world, I'll do my thing and let God sort it out later!! Warm Potato & Spinach Salad
Method:
Place potatoes into a medium saucepan. Cover with cold water, bring to boil over high heat. Reduce heat to medium and boil gently for 20 minutes or until just tender.

Meanwhile, heat a large non-stick frying pan over medium-high heat. Add proscuitto and fry for 2-3 minutes on each side or until crisp. When cool break into pieces.

Whisk olive oil, lemon juice, mustard and salt and pepper until well combined.

Drain potatoes and cut in half. Place spinach leaves and radicchio onto serving plates. Top with potatoes, proscuitto and avocado. Drizzle with dressing and serve immediately.
Serves 4
Preparation time: 10 minutes
Cooking time: 30 minutes
