Many spices can be grown at home.

The ones I have discovered to be perennials here in the northeast are thyme, oregano, sage, and mint. Mint can be very invasive, though.

Rosemary and marjoram are not very hardy in this climate.. Basil clearly an annual but very easy to grow.

I grow garlic every year.

Cinnamon, nutmeg, cloves, pepper, and vanilla clearly must be bought but store well. Nutmeg, cloves, and pepper can be bought whole and ground at home, meaning they will store a long time and keep their potency.

I also put my spices in canning jars and store them in the freezer. They are hermetically sealed and do not lose potency that way.

I forgot bay leaves, too. They keep well.

We’ve had the signs quite a while now.

Instead of encouraging ppl to grow a veg garden and raise a couple chickens, he says there will be shortages. What an irresponsible person. A reasonable person might even think that B wants it to happen.

Spices are something I have never attemted. We moved to Indiana from the easter shore of Md ( political reasons ) and are renting at the moment, we were talking about getting a grow lamp and trying something inside. Any recommendations?

We just bought a grow light. Mr. mm will send me a link to what we got.

We’re using it just as a supplement to daylight. I have bene putting my seedlings outside for the time being weather permitting.

You can also try container gardening. Check out Dianainwisconsin’s weekly gardening thread on Sat mornings.

No he is not.

A lot of the worlds wheat is grown in Russia and Ukraine.

China’s crop has failed.

Fertilizer prices are such they are not going have the yields.

Chicken producers in the US are facing a flu outbreak that is destroying herds.

And we are in year two of a drought.

Not thinking famine, but shortage for sure.

We had already purchased freeze-dried eggs prior to getting the machine, so haven’t done them. I have no doubt it would work just as well as all the other things we’ve run through it.

I was trying to remember which FReeper(s) bought one, and, couldn’t recall.

So glad I saw your post.

Do you run out of things to freeze dry? Do you cook extra servings, to have to freeze?

What do you store most freeze dried foods in?

Where do you have it set up, if you don’t mind saying.

Do many questions..I know.

We always have plenty of stuff to freeze-dry; we normally don’t cook anything extra, but make things specifically to go in the machine. We’ve done lots of meat, potatoes, chili, veggies, cheese and fruit.

We have it set up in a room off the kitchen, but I built a cart with wheels so we can move it wherever we want.

We did purchase a table-top machine that vacuum packs and seals mylar bags, which we like quite a bit. Once the bags are sealed, we store them in 5 gallon buckets.

Had a vacuum leak that required trouble-shooting, but found it and sealed it. So far, the company has been responsive and helpful. We’re still very happy with it and have done over 50 batches in the past 7 months, with each batch having a wet weight of between six and eight pounds.

I’ve seen people do 18 eggs per tray ( medium size harvest right ) we did 12 and there was a LOT of ice build up, more then anything else we’ve done, so now we only do 8 large eggs per tray.
Use a rolling pin to break them up, a blender made them to fine. I bought a roll of food saver bags, cut one about 8 inches longer then the trays, that way I can take the trays when there done and put them in the bag, flip them over and knock of all the product right into the bag, roll it, dump it into my blender (don’t blend) put it in a jar using a funnel, vacuum with a food saver , and let it set for about a week just to be sure there’s no moisture in it, then we mylar it with an oxegen obsorber. Wow, this turned out to be a lot longer than expected, sorry for the rant,

Here’s what I learned about the medium Harvest Right freeze dryer in the last few weeks:

Replace the cheap drain valve with a good brass one. The water that drains is acidic and rusts/ corrodes the cheap valve.

We had a vacuum leak and narrowed it to the epoxy plug. Put silicone around it and that solved the leak. According to HR tech, that plug tends to shrink after many cycles.

Eggs we haven’t tried yet - too busy running meat, potatoes, veggies & fruit.
