SARS-CoV-2 works as a quasi-species swarm. It varies characteristics as it infects each organ with multiple variants concurrently adapting. It is completely plausible to have delta and omicron active concurrently in a vaxxed individual. Both are vaxx escape variants. It is also possible for a concurrent infection to play "mix and match" with the RNA to cobble up a new variant. Depending on where that occurs, the variant may be confined to the host and not positioned to transmit to a new host, or it may become more "fit" and switch into high gear reaching lungs or digestive tract.
